So now I’m just like, “Okay. Not original, but at least better.”  And also, just a straight up meal blog would be lame, so I’m going to put on a different hat each time and be prolific about it.  I say that now, anyway.
Bachelor Budget Meals!
Installment 1: Chicken Tacos
Backstory: I cook a week’s worth of chicken every Sunday. This allows me to be versatile with what I make on a nightly basis and I don’t have to wait for stuff to cook.  Also, it’s just cost-efficient.  So when I got into my hood this evening I popped into the local produce shop and grabbed an avocado and black beans.  I already had the tortillas and red stuff.
Ingredients:1. Black beans2. A fresh avocado3. Pre-cooked chicken4. Corn tortillas5. Salt, pepper, lemon juice6. TapatioEstimated cost: 4 sizable tacos for ~$6 (ballparkin’ it)
Time: like 15 minutes.
DIfficulty: Subjective.  How hard is it to cut an avocado or heat up everything else?
Verdict: Delicious! And sort of healthy: omega 3 abundance.
Pairing: I ate some mixed greens, downed a fresh grapefruit juice, and then sipped on some green tea with lemon. These aren’t typical to my meals unless I’m fresh off a hangover, which I was today. Big time.
